Our risotto mixes were created by my late husband and myself in 2015. With our mutual passion for food, a desire to share that passion and a goal to create an easy-to-make meal - Rockin' Risotto became a reality. In only 20 minutes the cook in the household can have a tasty risotto dish ready for the table.
Risotto has a reputation for being associated with fancy, high-end restaurants; that it is fussy and time-consuming, requiring constant stirring where one develops risotto elbow... Perhaps you have seen Gordon Ramsey expel on a poor contestant: "KEEP STIRRING THE F****G RISOTTO!!.... But really, risotto is the epitome of Italian home-cooking and comfort food, In fact, true Italian cooks will tell you risotto should not take more than 20 minutes from start to finish.
In a real risotto, the rice is always the STAR of the dish which is why we use CARNAROLI rice, considered by chefs and fans to the "CAVIAR"of risotto rice. This is mostly due to the high content of amylose starch (24.1% compared to 12.9% in arborio rice. Amylose starch does not gelatinize during heating which means CARNAROLI rice absorbs more flavour yet remains separated, firm and fluffy, never mushy or gluggy.
Risotto opens up a whole new world of dishes for you. Use it as a main dish or a tasty side dish. It is a great way to use up leftovers. Try adding caramelized onions, ribbons of kale, chicken, bits of sausage, local seafood or wild mushrooms.
